Job Description:

As a Cost Controller, your primary responsibility will be to collaborate closely with the Food & Beverage Department on various operational and cost-related matters. Your role will encompass the following key responsibilities:
Recipe and Menu Costing: Prepare cost analyses for recipes and menus developed by our Executive Chef and recommend appropriate selling prices.
Goods Receiving Verification: Conduct test checks on goods received at the hotel to ensure that proper procedures are consistently followed.
Daily Cost Reporting: Generate daily flash reports of food costs and validate daily outlet void control sheets.
Banquet Event Analysis: Attend major banquet events with open bars, prepare profit and loss (P&L) statements for these events, and compile banquet revenue breakdown summaries.
Inventory Management: Conduct random inventory checks for outlets by reconciling opening and closing stock levels, taking into account store issues and sales.
Complimentary Item Control: Verify and manage complimentary bar order forms, Club Rotana Food & Beverage costs, in-room fruit baskets, and related items.
Skills Required:
Education and Qualifications:
- A degree in hotel management or accounting.
- At least two years of prior experience in a hotel environment.
- Excellent verbal and written English communication skills.
- Proficiency in F&B cost control.
- Computer literacy is essential.
- Knowledge of Opera, Micros, FBM, and SUN System is an asset.
